Evan Hufford, Wine Director
Evan started his career at the Native American owned and inspired Kai Restaurant in Phoenix, Arizona. Through Evan’s 5 years at Kai, he helped the restaurant achieve the Forbes 5 Star Award and rose from back server to wine director. Continuing his wine studies in Las Vegas and the Bay Area, Evan has served as sommelier at several Michelin starred restaurants and helped develop multiple Wine Spectator Grand Award-winning wine lists, including the Joël Robuchon restaurants in Las Vegas, and later serving as Head Sommelier and Restaurant Director at Saison in San Francisco. Evan is an Advanced Sommelier, French Wine Scholar, and California Wine Appellation Specialist.
How is SingleThread's wine program unique?
The SingleThread wine program champions local, hard-to-find California producers, featuring a back catalog of rare bottles from the 1970s, 1980s, and 1990s, particularly Pinot Noir and Zinfandel, which we have unearthed from dusty winery cellar corners and from vetted private collectors. We also feature the iconic wines of the Old World, with bottles of Burgundy in the cellar reaching back to the 1930s, large collections of first growth Bordeaux, and an ever-rotating selection of both grower and négociant Champagne. We enjoy comparing these legendary wines to their California counterparts, not only in how they’re similar but also in how they differ and what makes California wines unique. Our reserve pairings, in particular, are known to feature wines with decades of age, as we showcase old, rare bottles of California wines, and how they hold up next to the Old World.
