Sustainability at SingleThread

Rooted in the land. Guided by the seasons. Committed to the future.

At SingleThread, sustainability is not a program—it’s a way of life. From the field to the kitchen, we believe in thoughtful choices that honor the environment, our team, and the community we call home.

In 2020, SingleThread was honored with a MICHELIN Green Star, recognizing our commitment to sustainable gastronomy through ethical sourcing, waste and energy management, and the wellbeing of our team.

FARM FIRST PHILOSOPHY

Tucked into the heart of Dry Creek Valley, SingleThread Farm brings 24 acres of biodiversity and regenerative agriculture to Sonoma wine country. The farm thrives through the hands of a dedicated team of farmers who share a deep respect for the land and a commitment to responsible land stewardship. Guided by the seasons and grounded in sustainability, we cultivate entirely by hand—minimizing disruption to the soil and nurturing a resilient ecosystem for generations to come.

Our inspiration comes from our chefs, fellow farmers, and the global farming community. Across the seasons, we grow hundreds of varieties of culinary crops and cut flowers with care, intention, and integrity. The result is nutrient-dense produce, vibrant florals, and a thriving habitat that supports the health of both our table and our environment. In an era of shifting climates, we remain hopeful—believing deeply in the importance of seasonality, locality, and biodiversity.

Through our Community Supported Agriculture (CSA) program, we’re proud to extend the farm’s reach beyond our kitchen—sharing the harvest with our friends, neighbors, and local community. It’s a way for us to connect more people to the land, the seasons, and the food that sustains us all.

Responsible Sourcing

Every ingredient we source tells a story—of place, of season, of people, and of care. Our approach to sourcing is both hyperlocal and globally thoughtful, built on lasting relationships with producers who share our commitment to sustainability, transparency, and integrity.

We begin with our own farm, which supplies a significant portion of the restaurant’s produce, florals, and honey. But beyond our fields, we work with a deeply connected network of farmers, fishers, foragers, and artisans, each carefully chosen not just for the quality of their product, but for the responsibility with which it is raised, harvested, or grown.

In collaboration with the Japan External Trade Organization (JETRO) and the Japanese Ministry of Agriculture, Forestry and Fisheries, SingleThread has played a key role in piloting a new traceability technology for imported seafood. As an end-user testing partner, we’ve helped refine and implement systems that ensure transparency and ethical sourcing across international waters. Through this program, we’ve worked with Japanese producers of yellowtail from Kagoshima, madai from Ehime, and ocean trout from Aomori, highlighting both the quality of these ingredients and the integrity of their supply chains. This partnership not only strengthens global traceability standards but celebrates centuries-old fishing traditions that prioritize environmental harmony.

Closer to home, we work directly with California’s sea urchin divers and abalone farmers, many of whom are engaged in marine ecosystem restoration efforts. By sourcing directly from these small-scale coastal producers, we help support underwater habitat regeneration, reduce the impact of overfishing, and preserve traditional harvesting knowledge that is rapidly disappearing.

While minimal, the land-based proteins we do serve are held to the highest possible standard. Our partnership with Knights Valley Wagyu is a powerful example of responsible animal husbandry rooted in environmental care. This heritage-breed Wagyu is raised 100% grass-fed, with no grain finishing, minimal water is used on across the ranch and the cows are raised pesticide and hormone-free. Processing is done on a small scale, and distribution is kept hyperlocal. It’s a low-impact supply model that reflects our values of traceability, ethical treatment, and culinary excellence.

Zero Waste

Our kitchen operates with the belief that true hospitality extends to how we treat our resources. Our zero-waste mindset is designed not just to reduce, but to actively rethink the life cycle of every ingredient and material we use.

All organic food scraps, trimmings, and byproducts are composted or returned to the farm, where they’re transformed into soil nutrition, enriching our next harvest. This closed-loop system allows us to give back to the land that feeds us, creating a full-circle relationship between field and kitchen.

Energy & Circular Systems

From the ground up, we’ve designed our restaurant, inn, and farm systems with circularity, efficiency, and resource conservation in mind.

Our building is LEED-certified, constructed with environmentally conscious materials and outfitted with energy-efficient systems that minimize water use, reduce emissions, and optimize climate control. From  our kitchen to the irrigation systems on the farm, every aspect of our infrastructure has been thoughtfully engineered to reduce our impact on the planet.

On the farm, we rely exclusively on well water, eliminating dependence on municipal water systems and allowing us to manage our irrigation with precision and care. We rotate crops, build compost in-house, and utilize cover cropping to naturally replenish the soil and conserve inputs.

SingleThread is a certified carbon neutral business, reducing what we can through regenerative farming, local sourcing, and waste reduction, offseting what remains by supporting agricultural projects that pull carbon from the atmosphere and restore the health of ecosystems.

ThroughLine

In an effort  to shine a light on our community’s sustainability efforts and values beyond the fields and kitchen, we launched ThroughLine by SingleThread, a multi-part documentary series that explores sustainability not just as a set of practices, but as a guiding ethos.

Created in collaboration with filmmaker Justin Taylor Smith, the series explores regenerative farming, responsible sourcing, and the people working to restore ecosystems—from abalone farmers and sea urchin divers along the California coast to our partners in Japan advancing seafood traceability.

More than a visual companion to our work, ThroughLine is a statement of purpose. It connects guests and viewers to the deeper story behind every ingredient—honoring the land, the hands, and the intention behind each dish.
