The Title Page Experience

OUR DISHES TELL A STORY

During our 10-day "Title Page" residency at the Lodge at Blue Sky in Park City, UT, we aimed to create a special culinary experience amidst the stunning backdrop of the Wasatch Mountain Range. Set in the heart of nature, we brought the essence of SingleThread—and what we do in Sonoma — to the peaceful surroundings of Utah's Auberge resort. We were also very proud to support Saving Gracie Foundation and Protect our Winters - both causes near and dear to our hearts. 

Starting our evening with a short film - produced and directed by acclaimed filmmaker Justin Taylor Smith - we introduced our guests to our eco-system; our farm, our partners and artisans. The SingleThread experience is a sum of all of our parts, and our hope was to bring our guests on a journey to the origin of good and sustainable food systems and how imperative our partners are to what we do. 

CREATING CONNECTION

Thanks to the fantastic team at The Lodge at Blue Sky, we custom built a special Omakase-inspired bar where Chefs Kyle and Alex could tell the story of each dish presented in a very intimate setting. We curated custom art work by our dear friend Dwight Hwang (IG: @dwighthwan_gyotaku). Dwight is renowned for his mastery of Japanese Gyotaku, an ancient art form originating from fisherman's tradition. His work not only preserves the beauty of marine life but also honors the cultural heritage of Gyotaku, inviting viewers to appreciate the harmony between art and nature.

THE EXPERIENCE

As is always the case with Katina and Chef Kyle, their aspiration is for our guests to feel like they are entering Katina and Kyle's own home and experiencing a very special Omotenashi. A welcome experience was designed with this in mind; warmly greeting our guests with a hand crafted welcome beverage, in proud partnership with Gray Whale Gin. They not only craft exceptional spirits but also embody a commitment to environmental sustainability and marine conservation. With each bottle sold, a portion of the proceeds goes towards supporting various ocean-related causes, including marine mammal research and ocean preservation initiatives.

Additionally, Gray Whale Gin partners with organizations dedicated to protecting coastal ecosystems and promoting sustainable fishing practices - a cause that we are both deeply passionate about. Following our welcome beverage, guests were invited to select a sake cup from Katina and Chef Kyle's personal collection to enjoy throughout the dinner. 

THE MENU

Our 18-course menu was designed to tell a story, and allow each dish to speak to the passion not only behind our culinary team, but also highlight produce from our farm, dishware by our talented artisans and seafood from our sustainable partners. Whether highlighting Santa Barbara Sea Urchin from Stephanie Mutz (IG: @seastephaniefish); a diver who is equally focused on marine sustainability and biodiversity, or Knights Valley Wagyu; who advocate, promote, and practice holistically managed agricultural production - it was important for us to tell their story as each dish was served. Chef Kyle told the story not only of the dish, but its source and the food system that supports our mission of sustainability and stewardship of the land. 

In addition to our welcome beverage with Gray Whale Gin, our Wine Director Chris McFall proudly curated a really unique beverage pairing with our menu, including fantastic Sonoma selections from our friends at Reeve, Marine Layer, and Liocco, as well as global favorites like Dom Perignon, IWA and Château d'Yquem. 

The Saving Gracie Equine Healing Foundation is a non-profit animal rescue and sanctuary, with a primary focus on horses and farm animals. They are doing incredible work in bringing abused, neglected, surrendered, and abandoned animals to their farm - located right next to the Lodge at Blue Sky. We are honored to support them through Title Page, and are proud to share that we raised $20,000 to their cause. We are also proud to have raised $9,000 to support Protect Our Winters - an organization that is dedicated to combat climate change.
